So for the Surface Book 2 I purchased this: Again, my monitors can only handle 1080p, so that is my basic requirement. UPDATE: So after reviewing a great deal of costly hubs and docking stations, I had this epiphany that I should just try two separate adapter setups for each the SB2 and Macbook Pro.

The dual monitors we would be connecting to are below. The priority is to get a total of 3 independent screens from this one shared workstation. Charging isn't necessary, unless it is necessary to provide dual monitor output. We are not gaming on these laptops/monitors. Is there a device/configuration that can be shared between a Surface Book 2 and a Macbook Pro 2017 (4 Thunderbolt 3 ports) which would allow video output to two screens? If so, how cheaply can I achieve this? I already have the Microsoft Surface Dock at home, so this secondary device is just to share my office's dual monitor setup with a Macbook Pro user.
